  • Sickness and Cookies

    I was home today because I was sick. I don’t know what I have but it’s not looking flu like so yay! Most of my issue has been due to being achy and having a sore throat. I’m not running a fever or anything like that and I’m not coughing. I’ve been really, really tired as well.

    One of my projects for today was making these cookies. I came across them in one of the non-Xanga blogs I like to read and have been thinking about them ever since. I made a few changes to them. One change was I used salted butter instead of unsalted because that’s what I had on hand. The cookies still tasted really good. Also, I used coffee powder instead of espresso powder and I used more than what the recipe called for because I likes the coffee.

    Here’s the recipe I used:
    1.5 tbsp of instant coffee powder
    1.5 tbsp of boiling water
    2 sticks of salted butter
    2/3 cup of confectioner’s sugar
    1/2 tsp pure vanilla extract
    2 cups all-purpose flour
    Half-bag of milk chocolate chips (the recipe also says you can use something like heath bits if you’d like)
    Confectioner’s sugar for dusting (I didn’t do that because I actually don’t like my cookies super sweet)

    1. Dissolve coffee powder in boiling water. Set aside and let cool.
    2. Beat butter and sugar together until smooth (about 3 minutes or so). Beat in vanilla and coffee mixture. Slowly add in flour and then add chocolate chips.
    3. Put dough in fridge for two hours as possible (the dough will be super sticky and is much easier to work with when it has been refrigerated).
    4. Preheat oven to 325 degrees. Put dough on cookie sheet and roll flat. In order to avoid using more flour, I put a sheet of plastic over the dough and rolled it out. Don’t roll it out super flat; the dough doesn’t expand much.
    5. Bake for 18-20 minutes
    6. As soon as you take out the cookie sheet, cut cookie into desired shape (you can shape the dough beforehand but I chose not to and it works just as well).
    7. Cool and serve. This would be great with coffee or a dark tea. I had mine with vanilla soy milk and that still passed muster.

  • Those sound yummy. My boy is all laid up on pain pills today. He had part of his toe nail removed. It’s not nearly as gross as it sounds.

    Gargle your throat with hot water and salt, three or four times daily. Do you have a humidifier at home? If you don’t invest in it. The dry furnace air affects the mucus membranes of the nose and throat and symptoms like these are very common. The sinus pressure and head ache too.

    That’s ok, I will send you my bill after the wedding!!

    Meanwhile, thanks for sharing this recipe.  Frankly, I am shocked – Shocked, I say! – that you read a non Xanga blog.    I’ll have to try these soon.  It is a rainy day here and a holiday so Tawn is home.  A cookie project might be a good way to keep him busy.  Ha ha ha…

  • Hope you feel better soon.  I hate when you feel so shitty but you have nothing to show for it, such as an icky looking throat, fever, sinus infection, insert other nasty, showable symptoms here.  My sinuses have been nasty, but at this time of the year everyone’s having some sinus issue.  Mine are bleeding…. but that’s probably TMI!  Get well soon, Christina

  • These cookies sound SO delicious. I’m going to send a few people to your site for that recipe. Steve hates anything to do with coffee, so I won’t make them. I’m craving my pumpkin chocolate chip cookies, so I’ll have to settle for those. Steve will eat those.

    @BigToePeople - Pumpkin chocolate chip cookies? Now that sounds amazing. Actually these shortbread cookies are not too coffee-ish. They have a little bite to them but the milk chocolate really over powers the coffee.

  • His nails on his big toes are like curved more than most people’s. They used to grow into his toe a lot, and it would get all painful for him. So they just cut slivers off the sides and straightened them out.
