  • Apple-licious

    On Saturday, we went apple picking with another couple. We went with this same couple last year to pick pumpkins and cook dinner together. This year we decided to get a little more ambitious and pick apples and make a bunch of apple related goodies and then cook dinner together.

    We went to a huge orchard about 45 minutes from our house. We picked 3 kinds of apples: Matsu (green and tangy), Empire (red and semi-sweet), and Magnolia Golds (yellow and perfect for apple sauce). It started to rain a little bit but we picked up a few more goodies from the farm: huge green peppers, an apple corer, cider, and pumpkin butter.

    We made a trip to Whole Foods (this has also seemed to become enforced tradition when this particular couple comes over). When we got home, we started making the goodies while watching college football.

    Here’s what we made:
    - apple pie
    - apple sauce
    - apple cake
    - apple turnovers

    We took most of it up to distribute amongst the families that came to our engagement party.

  • Lucky you!  That sounds like so much fun.  It also sounds tasty…  Hope you had some money left after that Whole Foods trip.

  • Would the apple cake be a Jimmy Cake? A cake with a puddingy layer of apples? If not, I’ll send you a recipe for the next orchard trip. I make Jimmy Cakes for my grandfather because his name is James. Jimmy Cakes were supposedly named for King James.

  • Yum. Apples. You just reminded me of my favorite sandwhich. An apple, bacon and grilled cheese sandwich. Sounds nasty…but it is so good.

  • Steve would be SO jealous. I don’t bake (except for the muffins I’m going to do this week) and I don’t do pies. Steve adores apple stuff…he’s already checking stores for apple cider of the fresh kind.

  • @christao408 - I love Whole Foods but there is a huge reason that it has to be a special treat for us. I don’t know how people consistently shop there.

    @harmony0stars - Ooo, no. Ours was more like apple bread (very banana bread like). Definitely send the recipe my way!

    @BigToePeople - Oh, the pies we made were so easy. We use pre-made crusts. Crusts are the hardest thing to make, I think.

    Well, broken doors are minimally inconvenient….but, I’m glad you didn’t have a ashes and soot and loss to content with!

    Tell me more about the book you are reading. Right now I’m reading The Year of Wonders by Geraldine Brooks. She also wrote People of the Book. Both very interesting. Read ‘em?

  • Here you go! You’ll need a springform pan for this recipe.

    Jimmy Cake
    1st batter recipe:
    2 oz butter
    1/2 sugar
    1 tbsp vanilla
    2 eggs
    1 c flour
    1 tsp baking powder
    4 apples
    1 tbsp cinnamon

    2nd batter recipe:
    2 eggs
    2/3 c sugar
    2 tbsp vanilla
    3/4 c sour cream

    Preheat the oven to 350 F.
    First Batter: Grease and flour springform pan. Mix butter, sugar, and vanilla till fluffy. Add eggs. Sift flour and baking powder into batter. Pour batter into pan. Peel, core, and slice apples into wedges and arrange them in a circular pattern over batter. Bake for 20 minutes.

    2nd Batter: Beat eggs, sugar and vanilla till fluffy. Stir in sour cream and gently pour over first batter in pan. Return to over for another 40 minutes.
